| Macadamia
Nut Ice Cream (Makes about 3 cups) |

Toast the Macadamias in the oven until they are a golden brown. Make a custard sauce by stirring together the cream, egg yolks and sugar over medium heat. Continue stirring until just thickened and immediately pour through a strainer to stop cooking. Do not let it boil or it will curdle. Stir in the remaining ingredients while still warm, then allow to cool thoroughly. Pour into an ice cream machine and churn according to the machine instructions until set. Midway through the churning, add the toasted Macadamia pieces. If using roasted Macadamia nuts, do not brown them in the oven. |
| Chocolate Macadamia Nuts |

Melt your favourite chocolate in the microwave oven. When mixture is runny add nuts or fruit and nuts. Mix. Then spoon teaspoons of the mixture onto greased paper cups and cool. This is a recipe to play around with. Try using Macadamia nuts and dried Ginger pieces or Macadamia pieces and dried sultanas. Very tasty ! |

Nut Crisps (Makes about 20 - 24) |

Cream butter and sugar until light and fluffy. Add nut mixture, flour, and mix well. Add in essence. Spoon heaped tablespoons onto greased trays, flatten with a fork, and sprinkle lightly with the coconut. Bake at 180 degrees C (350 degrees F), approx. for 15 mins or until light gold in colour. Remove from oven and cool. Best served with any plain ice cream. |
| Macadamia Nut Toffee |

Make your usual recipe for toffee. Lay out roughly chopped macadamias (not too small) on a well greased tray. Pour over toffee and cool. When hard take to the toffee with a hammer. For a different approach, put the nuts in paper patty pan cases and pour toffee over. Try sprinkling a little dessicated coconut over the top. Very very tasty. Macadamia nuts are truly delicious. |
